Genuine maple syrup comes from the sap of sugar maple trees. It is harvested in the very early spring when the days are warmer but the nights still frost. The United States produces 14 percent of the world’s maple syrup creating 1.45 million gallons in 2007.
The Maple Fest maple syrup demonstrations are conducted by special guest Peter Hatlestad, Nature Director at Covenant Harbor on Saturdays, March 1, 8 & 15, 11 a.m.-3 p.m. He and his staff will showcase the process used on raw sap to make it into that delicious treat we know as maple syrup.
